Succulent Saturdays Installment

 

Ingredients

 

1 cup                unbleached organic white flour

¼ cup               whole wheat pastry flour

2 tbspn             natural pure cane sugar

½ tsp                salt

2 tsp                 baking powder

To taste            cinnamon, nutmeg

 

2 tbspn             vegetable oil

½ cup               water

¾ cup               milk

 

Method

1.                   Combine the dry and wet ingredients separately.  It’s good to sift the flour if possible.

2.                   Mix the wet and dry together with a whisk or fork, making sure to take out all the lumps.

 

I fry them like crepes (or thin like dosas).  As topping you can add as you like: sugar/cinnomon mix. Maple syrup, or roll it up (like a dosa/crepe) and add cut frutis like mixed berries or bananas.  Can sprinkle cinnamon, nutmeg, sugar or other similar spices on top.

 

Makes about 5-7 thin pancakes, serves about 2-3 people.
