Ingredients:

 

3          Eggs

1          slice of cheese of liking (I used jalapeño cheese)

1          spring of rosemary

Pinch    dried oregano and parsley leaves

            Salt and pepper to taste **

 

**Note the cheese has salt in it, so there may not be a need to add more salt.

 

Method:

1.         Place eggs, salt, pepper, and cheese into a blender- I use the Magic Bullet Blender.

2.         Heat pan and use your choice of oil or butter as a frying agent.

3.         When pan is hot, pour in egg mix and sprinkle herbs on top.

4.         Fry scrambling it. It would be nice and fluffy and you’ll get a nice smell from all the herbs.

 

Serves 1-2 adults.  Eat with toast, home fries or, as we did, pierogies.
